Cinnamon Apples
Ingredients
- 6 crisp, medium apples
- 6 wooden skewers
- 1 1/3 cups granulated sugar
- 2 cups light corn syrup
- 1/4 tsp. red food coloring
- 10 drops of oil of cinnamon
Instructions
Wash and dry the apples, remove the stems. Insert skewers into the blossom
ends of each apple.
Combine sugar, corn syrup, and food coloring on
top of a double broiler. Cook directly over low heat, stirring till
the sugar dissolves, for about four min. Cover and cook slowly for 8
min. Uncover, and cook without stirring, to the hard crack stage
(about 300 degrees, use a candy thermometer). Stir in the flavoring,
and place the top of the double broiler over boiling water in the
lower part.
Turn each apple in the syrup to coat, and twirl the apple to spread
the coating evenly, letting excess syrup drip back into the pan. Set
the apples on a buttered cookie sheet. If the syrup in the pan thickens,
reheat over direct heat.
